Our Story — Ghana × Japan

From our family farm to your table

Darling Wings Chocolate began with a simple desire: to help our aging parents make a better living from their cocoa production.

In Ghana, as in many cocoa-growing communities in West Africa, cocoa-farming families face difficult economic conditions. That reality led us to ask a simple question:

Could we create more value from the cocoa we grow?

That question became the beginning of our chocolate journey.

From cocoa beans to chocolate

In September 2017, we enrolled in the "Chocolate Making, from the Bean to Bar" program at Ecole Chocolat, an online chocolate-making school.

The following summer, we returned to Ghana and worked on the cocoa farm, experiencing the production process first-hand — from pre-harvest through post-harvest — and learning how each stage affects the quality of the beans.

In 2019, the journey continued in Japan.

At Cacao Salon Afuku in Tokyo, we received hands-on training with owner Mrs. Aizawa, learning different approaches to roasting cocoa beans to enhance their natural flavors, as well as the art of chocolate tempering.

Today, cocoa from Darling Wings Farm in Ghana forms the foundation of our chocolate journey.

At our small workshop in Yokohama, Japan, we transform cocoa nibs into small-batch craft chocolate.

Our cocoa is also used by partner chocolate makers, including Cacao Salon-Afuku and CacaoriKaori, helping us build relationships around the shared goal of creating exceptionally delicious chocolate.

More than chocolate

Our work begins with cocoa, but it is really about connection.

From the farmers who grow and process the cocoa in Ghana, to the people who craft it into chocolate in Japan, and finally to the person enjoying it at home — we want to create a closer and more meaningful connection between the people at each stage.

Our passion is to provide equal exchange between farmers and the final consumer.
